Joining Veganuary?

It’s easier than ever to eat a vegan diet! but if you’re not sure where to start, why not take on the #Veganuary challenge. Veganuary is not just a hashtag, it is a charity that encourages and inspires people to try eating a vegan diet throughout January. You never know, after a month you might decide to stick with it, or you might not, but you’ll never know unless you try it. The stereotypical image of veganism has changed dramatically over the last few years, the demand for non animal products is now mainstream with many people under the age of 25 leading the way. Healthy Eats . . .

Last weekend we visited Bournemouth for a mini break by the sea. It’s half term so we really wanted to spend some time together as a family and take a break from work. One of my favourite things about holidays is the food! At home I love cooking but on holiday we go out for dinner and of course enjoy the local favourites. You can’t beat fish and chips in newspaper on the coast. We also discovered a new restaurant called The Skinny Kitchen. You may have already seen a mouth watering stack of pancakes on my Instagram feed. After a quick glance at the menu, I had high expectations for our meal and we were not disappointed. The food was fantastic! Their impressive smoothie and juice menu has everything a healthy gal could ask for. I went for this Acai berry blast and a spicy bean chilli. Oh my . . . the desserts! Wok Soup Recipe

  Today I had a delicious lunch with my friend & wonderful cook Sylvia. She made us a vegetable Wok Soup. It’s really simple and quick to make so I thought I’d share the recipe here on the blog.  It only took 15 minutes to make this dish, ideal if you want to make a quick nutritious meal. Ingredients Broccoli Courgette Carrots Soya Beans Tomatoes Rice Noodles Smoked Tofu Vegetable Stock Method Dice the vegetables and fry them in a large wok for a few minutes. Add the carrots and the broccoli first as they need a slightly longer to cook. Next add 500ml of boiling vegetable stock. Lastly add the rice noodles. Simmer a medium heat for 2-3 minutes Serve and enjoy!!  Note [this recipe is wheat free, meat free & dairy free]

Part time Vegan

Could you go vegan? I tried it once . . . ‘I have a lot of friends that are vegans and I know that they will be cheering me on. I am challenging myself to see if I can actually do this. I like to think that I am not naive about where our food comes from, but if I’m honest, I don’t really question it much either. It is true that ignorance is bliss. My usual diet contains a lot of meat. My favourite dinner is hoisin duck stir fry!, so this will certainly be a challenge for me. You may have seen a post that I wrote recently, titled ‘Dairy Free’. My diet is mostly dairy free, (with the exception of Nutella) so you could say that I am already half way there. So what will I be eating? Easy Peasy Vegan Pasta

Easy Peasy Vegan Pasta This is my quick spaghetti supper recipe, it literally takes 10 minutes. My son calls it ‘Mummy’s green spaghetti’ Ingredients. 1 bunch of fresh Basil 1 bunch of Baby Spinach 2 tbsp Olive Oil Fresh Garlic Alpro Soya Cream Method. Boil the pasta for 8-10 minutes. Blend all of the above ingredients into a paste. Stir in to the spaghetti. Top with sliced cherry tomatoes. Enjoy. Oh and it’s vegan too!
